  1. Cook the spaghetti in salted boiling water until al dente, saving a cup of the water.

  2. While it cooks, pat the shrimp dry and season. Heat the oil and 1 tablespoon of butter in a large pan over high heat and sear the shrimp for 1 minute per side until pink. Remove to a plate.

  3. Lower the heat, add the remaining butter, garlic and chilli flakes and cook for 1 minute until fragrant but not browned.

  4. Add the drained pasta, lemon zest and juice, the shrimp and a splash of pasta water. Toss for a minute until the sauce clings to the strands.

  5. Finish with parsley and black pepper. Serve immediately.

Notes from the kitchen

Frozen shrimp work fine; thaw them under cold running water and dry very well before searing.
